A Spin on Guacamole

Everyone has a favourite go-to guacamole recipe. I personally like mine to be chunky and more substantial, so threw in some corn and feta. Bingo. For even more flavour, I cooked my corn in bacon grease. Double bingo.

INGREDIENTS
  • 1 cup corn (to save time, I use the little cartons of kernals) 
  • 2 avocados
  • 1 kaffir lime (the small round ones), juiced
  • 1/4 cup onion, diced
  • 1 medium tomato, diced
  • 2 strips fatty bacon
  • A few leaves of cilantro
  • 1/4 cup feta, crumbled
  • Salt, pepper, or Cajun seasoning to taste
  • Tortilla chips


DIRECTIONS

1. Cook bacon in pan on medium-high heat until oils are bubbling
2. Add corn to pan, toss, and allow to cook for 6-8 minutes before tossing and leaving it again for another 6-8 minutes.



3. While the corn is cooking, prepare and combine the other ingredients. 

For the avocado, half it by slicing around the pit, then twist the halves in opposite directions to separate. From here, you can remove the pit and slice the fruit while it's still in its skin/shell. Scoop the fruit out with a spoon, then mash with a fork.


For the lime, slice it according to this diagram, which allows you to extract the most juice from squeezing.


4. Mix everything up and enjoy with tortilla chips!

  1. Ah Shak, I knew the purists would speak up!
    It's really only 2 extra ingredients, and it is just my personal spin for something more chunky and substantial.
